Number one piece of advice I can give is to know where your power springs from. Not everyone who plays the priest class subscribes to a deity, but they still have to pull their powers from somewhere. Making this one decision should start an avalanche of character development.
Just to offer an example, I knew from the start that my "priest" was a necromancer. He's never delivered a sermon or converted a follower to his deity because he doesn't have one. As far as he's concerned, he is self-sustained by his own powers and that which he drains from others. If you choose this kind of path, do your best to be polite when folks ask you to marry them because you're "obviously a priest". *sigh* On the flip side, this path robs you of many unique priestly RP opportunities.

that is a really good idea,
my issue is i don’t want to be a goody goody elf that loves the 'light' but i don’t want to be a arrogant elf who thinks its her own power that no one else has.
got to find a balance i guess!
I’m thinking that she still questions where from and what the light is. i wanted to play her as a little bit of a bookworm, who is looking for the truth. this can also be good next to her in shadow spec as well. blood elves don’t seem to have a god or worship the 'light'.
think i need to do some more research on blood elf priests

Well I would imagine that it's not at all taboo for a blood elf to still follow the church of the Light. Sure, humans kinda screwed them over, but I would imagine that some devout priests of that order could still cling to those beliefs. In fact, one might be able to create an interesting character based on that. Though I do understand you wan't to avoid that sort of "goody-goody" image.
I don't know. It depends on your character's personality really. I mean, unless your doing some VERY nefarious things, the Light should still come to your character's aid. Otherwise, he doesn't have to have this, well, priestly attitude.

As a human:
Refer to everyone as 'my son', or 'my daughter' except other priests. Who you will refer to as 'brother' or 'sister'. Paladins will also be referred to as 'my son'.
Demand that people call you 'Father' -name-. When people ask for your name, introduce yourself with the title. The title is important.
Preach the light everywhere you go, that is what you are, a priest of the light. If you end up going more twisted along the way and going shadow... preach that.

Blood Elves often mention The Eternal Sun. You can read about the Sunwell here: http://www.wowwiki.com/Sun_Well
Currently, it is apparently a blend of the Arcane as well as the Light (from M'uru).

Light Worship originated from the Quel'dorei, humans only started worshiping the light through their influence. The humans obviously went off and did their own thing with it, but the elves are still the progenitors of light worship.

Personally, I'd probably choose A'dal for my "god" as a belf. Nothing like having a deity you can openly RP with and acquire a collection of strange looks from those who don't understand. We know the Naaru's powers can be siphoned off and used for divine casting; I see no reason why they couldn't grant it willingly even if they're not technically "gods".

FOR THE HORDE, never transfer to ally. i am a true hordeian (would that be right?)
narru as my god lol. dont think that would work after stealing magic from one!
quel'dori may be the first priests but sin'dori only have the two NCP trainers to take ideas from (which is rubbish)
also the person i am roleplaying with is a undead warlock, so i cant be much of a zelot.
think i mite be more of a happy-go-lucky peace loving christain and a pinch of rock star and a complex about my fel-eyes.

How to RP as a Priest:
Carry Saronite Bombs. Lots of them.
Throw them indiscriminately at players.
There's your Priest.

Jadoko! How dare you suggest such a sin! You're only supposed to throw bombs at Orcs, Tauren and Gnomes! For there is no possibility that they are fellow priests.
So in the name of Lightwell Engineering Co®, I shall smite you!
